Simple, satisfying, quick cook broccoli recipe

The sun is out today and it’s almost lunch time so I’d have to say that this is the real happy hour for me.  Actually I have many happy hours throughout my day, especially pertaining to food, but I always try to plan ahead before leaving my house so I don’t end up wasting money at a restaurant/cafe. Fortunately I like to cook and have the time, but I understand many people don’t have the time and if they do they might not want to spend it in the kitchen.

With that in mind I always like to find a solution to problems whenever I can, which is why lately I’ve been trying to make my meals with 5 ingredients or less, and create them in 10 mins or less so that anyone can do it. Not only that, but if I had to estimate most of these meals are costing me $2 or less to create, and who doesn’t love that compared to spending $12 for a meal out.

One of my favorite things to make lately is as simple as it gets, but it is extremely satisfying and flavorful.  I don’t even know how to categorize it really, but the best way I could describe it is that it is a vegan version of broccoli casserole.  Honestly sometimes I just can’t believe that food this healthy could taste as good as it does.  Also I don’t believe all my meals need a star protein (like tofu, tempeh, beans, or some other meat replacement), especially since there are plenty of vegetables like broccoli that are high in protein, and fiber is more important anyways in my eyes.
